Olive butter is fairly a new addition to the Palestinian cuisine, introduced from other countries but well received by Palestinians. Sawsan Saadeh specializes in the production of olive butter, as she sees it as a new and innovative way to enjoy olives and also as a different way to start her own business with a unique product. The homestay project has enabled her to network, collaborate with other women and to sell her product in the Palestinian market. Although the making of the olive butter is not an easy process, yet the final product is characterized with a delicious rich taste especially if served with strained yogurt, black tea, tomatoes and eggs.
